I originally shared this recipe during Crock Pot Week after finding it in the cookbook Slow Cooking All Year ‘Round. It’s a great way to free up oven space while still serving a classic holiday dessert.
Crock Pot Crustless Pumpkin Pie
This crustless pumpkin pie, sometimes called pumpkin pie pudding, is rich, creamy and perfectly spiced. It’s ideal for holidays or any time you want classic pumpkin pie flavor without making a crust.
The slow cooker yields an even, custard-like texture. To ensure consistent cooking, rotate the insert a couple of times during the cooking period—similar to rotating a pie in the oven.


Miss the Crust?
If you want a crust alongside the crocked pie, make quick pie crust cookies. Roll out store-bought pie dough, cut into strips, then cut crosswise into small rectangles. Bake until lightly golden—about 5–8 minutes—so they stay crisp and make a great accompaniment for crust lovers.
Crock Pot Size
A 4- or 5-quart slow cooker works best for this recipe; a 6-quart can make the filling too thin. Some readers have had success with as small as a 2.5-quart cooker. Adjust cook time slightly depending on your model.

Ingredients
- 15 oz Pumpkin
- 12 oz Evaporated Milk
- 3/4 Cup Brown Sugar
- 1/2 Cup All Purpose Flour
- 1/4 teaspoon Salt
- 1/2 teaspoon Baking Powder
- 2 Eggs Beaten
- 2 tablespoon Butter Melted
- 2 teaspoon Pumpkin Spice

Combine all ingredients in the crockpot and stir until smooth. Cook on low for 2–4 hours, rotating the crock once or twice for an even set. The pie is done when the center is set and a toothpick comes out clean.
