Ingredients

  • 1 pint cherry or grape tomatoes (halve if large)
  • 1 large cucumber (cut into bite-size pieces)
  • 1 (9.5 oz) jar of pitted Kalamata olives (drained)
  • 1 (8 oz) chunk of feta (cut into 36 cubes)
  • 1 bottle of Greek or Italian dressing

Instructions

  • Marinate the cucumber pieces, cherry tomatoes, and drained olives in a bowl with Greek or Italian dressing. Place the feta cubes in a separate bowl with a little dressing so they hold together and don’t crumble when mixed. Refrigerate for a few hours or overnight.
  • Assemble the skewers by threading an olive, a tomato (or tomato half), a cucumber piece, and finish with a feta cube. Arrange on a platter or stand upright for an attractive display.
