Ingredients
Creamsicle Mixture
- 1 cup orange juice (no pulp or freshly squeezed and strained)
- 1 cup plain Greek yogurt
- 2 teaspoons vanilla extract
- 2 tablespoons Domino® Golden Sugar
Graham Cracker Crumble
- 1/3 stick unsalted butter
- 4 sheets graham cracker, broken into small pieces
- 1 tablespoon Domino® Light Brown Sugar
- Pinch kosher salt
Instructions
- Prepare the creamsicle mixture: Add orange juice, Greek yogurt, vanilla and golden sugar to a blender or food processor and blend until smooth. Pour into popsicle molds, leaving about 1 inch of headroom. Freeze 30–40 minutes until set but not solid.
- Make the graham cracker crumble: In a saucepan over medium-low heat, melt the butter until golden (5–7 minutes) to brown it, or use melted butter if preferred. In a bowl combine the graham cracker pieces, brown sugar and a pinch of salt. Add the browned butter and mix until well coated. Cool to room temperature.
- When the creamsicles are semi-frozen, sprinkle the graham cracker crumble over the tops, insert sticks, and freeze at least 2 hours or until completely firm.
Notes
- For striped creamsicles, prepare the base and chill it. Use an extra ½ cup orange juice. Alternate small layers of plain orange juice and the creamsicle mixture, freezing 20 minutes between layers to build stripes.
- To crush graham crackers, place them in a sealed bag with most of the air removed and gently pound with a rolling pin or mallet.
- Browned butter adds flavor, but melted unsalted butter is an acceptable shortcut.
- Popsicle sticks can be washed and reused; clean with warm soapy water and air dry.
