Ingredients

  • 40 Nilla Wafers cookies
  • 1/4 cup strawberry jam (or any flavored jam you like)
  • 1/4 cup white cookie icing
  • 12 tablespoons rainbow sprinkles

Instructions

  1. Place 20 Nilla Wafers cookies flat-side up on a work surface or tray.
  2. Place about 1/2 teaspoon of strawberry jam on each of the 20 wafers. Be careful not to overfill.
  3. Press a second Nilla Wafer, flat-side down, on top of each jam-covered wafer to create a sandwich.
  4. Spread a small amount of cookie icing on the top of each bite, just enough to cover a small area so some of the top cookie is still showing to give them that “pop tart frosting” look.
  5. Immediately sprinkle a pinch of rainbow sprinkles on top of each bite before the icing sets.
  6. Let the icing set for about 10 minutes before serving. Enjoy!
