- Shrimp: 32 shrimp (21–25 count), shells removed with tails on
- For the brine: 1/4 cup kosher salt, 1/4 cup sugar, 1 cup water, 2 cups ice
- For the cocktail sauce: 1 (14 1/2-ounce) can diced tomatoes, drained; 1/2 cup prepared chili sauce; 4 tablespoons horseradish; 1 teaspoon sugar; a few grinds fresh black pepper; 1/2 teaspoon kosher salt
- Olive oil and Old Bay seasoning for broiling shrimp (optional)
Instructions
- Rinse shrimp under cold water, peel shells leaving tails, and devein if needed.
- Place shrimp in a bowl with the brine mixture and refrigerate 20–25 minutes.
- While shrimp brine, combine drained tomatoes, chili sauce, horseradish, sugar, pepper, and salt in a food processor. Blend to your desired texture.
