This crustless pumpkin pie, sometimes called pumpkin pie pudding, is rich, creamy and perfectly spiced. It’s ideal for holidays or any time you want classic pumpkin pie flavor without making a crust.

The slow cooker yields an even, custard-like texture. To ensure consistent cooking, rotate the insert a couple of times during the cooking period—similar to rotating a pie in the oven.

Ingredients

  • 15 oz Pumpkin
  • 12 oz Evaporated Milk
  • 3/4 Cup Brown Sugar
  • 1/2 Cup All Purpose Flour
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Baking Powder
  • 2 Eggs Beaten
  • 2 tablespoon Butter Melted
  • 2 teaspoon Pumpkin Spice

Instructions

  • Combine all ingredients in the crockpot and stir until smooth. Cook on low for 2–4 hours, rotating the crock once or twice for an even set. The pie is done when the center is set and a toothpick comes out clean.
