Nilla Wafers Pop Tart Bites are tiny pop tarts that are big, big fun and so simple to make with just a few ingredients.
Ingredients
- 40 Nilla Wafers cookies
- 1/4 cup strawberry jam (or any flavored jam you like)
- 1/4 cup white cookie icing
- 1–2 tablespoons rainbow sprinkles
Instructions
- Place 20 Nilla Wafers cookies flat-side up on a work surface or tray.
- Place about 1/2 teaspoon of strawberry jam on each of the 20 wafers. Be careful not to overfill.
- Press a second Nilla Wafer, flat-side down, on top of each jam-covered wafer to create a sandwich.
- Spread a small amount of cookie icing on the top of each bite, just enough to cover a small area so some of the top cookie is still showing to give them that “pop tart frosting” look.
- Immediately sprinkle a pinch of rainbow sprinkles on top of each bite before the icing sets.
- Let the icing set for about 10 minutes before serving. Enjoy!
