I’ll keep this short today — it’s been a busy day and little Mr. Ford has been unusually fussy. After asking around, I discovered the trick: stand up, walk him, and gently sway or bounce until he drifts off. Apparently he hates being rocked while sitting. You learn something new every day.
Because of the chaos, I only have about 45 minutes to write this post before heading to life group, so I won’t ramble as usual. But don’t let the brief post stop you from trying the utterly delicious toasts shown here.
Honestly, it’s hard to beat the combination of garlicky toast, creamy goat cheese, sweet and savory caramelized onions, and toasted pine nuts. Each bite is a perfect balance of flavor and texture — you’ll be so glad you made these.
These toasts are simple, but each layer matters:
- The toast. Bake the bread until golden and crisp, then rub with a garlic clove for a big hit of flavor. That alone is wonderful.
- The goat cheese. Use spreadable goat cheese so it spreads smoothly over the toast. Creamy, tangy, and effortless.
- The caramelized onions. Cook the onions low and slow for 15–20 minutes, stirring often, until deeply browned and sweet. They taste rich as if they took forever to make.
- The pine nuts. Toast them briefly in a pan to bring out a warm, nutty flavor. Toasted pine nuts make a noticeable difference.
Finish with salt and black pepper, pair with a glass of wine, and you have an instant favorite — perfect for sharing with friends.
