Ingredients

Everything Bagel Chicken Salad

  • 4 cups cooked chicken chopped (rotisserie works well)
  • 1/2 cup dried, unsweetened cherries loosely chopped
  • 1/2 cup walnuts loosely chopped
  • 1/2 cup Tessemae’s Everything Bagel Ranch
  • 2 tbsp parsley loosely chopped
  • Kosher salt to taste
  • Black pepper to taste

Sweet Potato Toast

  • 1 large sweet potato sliced lengthwise into 1/4-inch slices

Instructions

For the Sweet Potato Toast:

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Arrange the sweet potato slices on the prepared sheet and roast 18–20 minutes, until fork-tender.

For the Chicken Salad:

  • In a large bowl, combine the chicken, cherries, walnuts, and Tessemae’s Everything Bagel Ranch. Mix until evenly coated. Stir in chopped parsley and season with kosher salt and black pepper to taste.
  • Serve the chicken salad atop sweet potato toast, in a sandwich, or over greens.
