These are one of my all-time favorite cookies, seriously.
They have a fantastic flavor and a chewy yet soft texture.

This recipe is simple, and they vanish as soon as I bake them — twice this month already!

You can use any apple you prefer;
they all work wonderfully.
Apple and cinnamon are two of my favorite flavors, and baking these fills the house with an amazing aroma for the rest of the day.

I usually hide a few so I have a secret stash — they go so fast!

Apple Cinnamon Oatmeal Cookies
Ingredients
- 1 cup Flour
- 2 cups Uncooked Oats
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1/4 tsp Nutmeg
- 2 tbsp Softened Butter
- 1/2 cup Sugar
- 1/2 cup Brown Sugar
- 1 Egg
- 3 tbsp Applesauce
- 2 tsp Vanilla
- 1 cup Peeled and Diced Apple
Instructions
- Preheat the oven to 350°F (175°C).
- Line baking sheets with parchment paper or a silicone mat.
- Whisk together the flour, baking powder, baking soda, salt, cinnamon and nutmeg.
- Stir the oats into the flour mixture and set aside.
- Cream together the butter, brown sugar and granulated sugar until light and fluffy.
- Add the egg, applesauce and vanilla, and beat until blended.
- Gradually add the flour mixture, stirring by hand until just incorporated.
- Fold in the diced apple pieces.
- Drop the dough by tablespoonfuls onto the prepared sheets, spacing about 2 inches apart.
- Bake 18–20 minutes, or until the edges are lightly browned. Allow to cool slightly, then transfer to a wire rack.
