We’re a family of coffee lovers, so we had to include this bold and aromatic ice cream. It’s smooth, rich and dreamy—the perfect way to finish a meal. Jude’s Flat White Coffee Ice Cream won a Great Taste award and is one of the Mezgers’ personal favorites. This recipe reproduces that signature flavor so you can share it at home.
Ingredients
- 75 ml (2½ fl oz) strong coffee — about 2 generous shots
- 175 g (6 oz) icing sugar
- 500 ml (18 fl oz) double cream
- Pinch of ground coffee, to serve
Instructions
- Make the coffee (a cafetière or strong espresso works well) and pour it into a large bowl. Add the icing sugar and whisk until dissolved. Let the mixture cool for about 5 minutes before adding the double cream.
- Using an electric handheld whisk, beat the cream and coffee mixture for 4–5 minutes until it becomes thick and voluminous with soft peaks and the whisk leaves a trail on the surface.
- Spoon the ice-cream base into an airtight, freezer-proof container and freeze for at least 4 hours, preferably overnight, until firm. Remove from the freezer and let soften for 5–10 minutes before scooping. Serve with a light dusting of ground coffee.
