This easy apple crisp is one of the best you’ll ever try. It’s a simple baked dessert made with fresh apples, warm spices and a buttery, oat-filled crisp topping baked until golden and crunchy.
The Best Apple Crisp Recipe
Autumn feels like apple-crisp season, but this recipe works any time of year. It combines two types of apples for balanced flavor and texture, a tender, warmly spiced filling, and a rich, buttery topping studded with oats and pecans.
The fruit is simply peeled and sliced, tossed with a little flour, sugar, cinnamon, vanilla and lemon, then topped with an old-fashioned crumble that bakes up crisp and golden. Serve warm with vanilla ice cream or whipped cream for a classic finish.

Why This Recipe Works
- Uses two apple varieties for a nice balance of sweetness and tartness.
- Simple ingredients deliver a comforting, crowd-pleasing dessert.
- The topping combines oats, brown sugar and cold butter for excellent texture.
- Quicker and easier than a traditional pie, with all the cozy flavor.
- Plenty of topping for a crispy, crunchy bite on every spoonful.
- Great for potlucks, holidays or an easy weeknight treat.
- No need to pre-cook the apples — they bake tender right in the oven.
Ingredients
Ingredients you will need:
- Fresh apples — a mix such as Red Delicious or Honeycrisp and Granny Smith
- Sugar
- Butter (melted for the filling and cold for the topping)
- Brown sugar
- All-purpose flour
- Old-fashioned oats
- Vanilla extract
- Cinnamon and a pinch of salt
- Lemon juice (a squeeze)
- Pecans, chopped

How to Make Apple Crisp
Preheat the oven to 350°F (175°C) and prepare a 9 x 13-inch baking pan with nonstick spray or butter.
Peel, core and slice the apples to about 1/4-inch thickness and place them in a large bowl. Add 3 tablespoons melted butter, 2 tablespoons all-purpose flour, 2 tablespoons water, 2 tablespoons sugar, 1 teaspoon vanilla, 2 teaspoons cinnamon, a squeeze of lemon and 1/4 teaspoon salt. Toss gently to combine.

For the topping, mix 1 cup all-purpose flour, 1 cup old-fashioned oats, 1 cup brown sugar and 1/2 teaspoon cinnamon in a bowl. Cut 1/2 cup cold butter into small pieces and work it into the dry ingredients with a fork, pastry cutter or your fingers until the mixture forms coarse crumbs. Stir in 1 cup chopped pecans.

Transfer the apple mixture to the prepared pan and sprinkle the crumble topping evenly over the apples. Bake for 40–45 minutes, or until the topping is golden brown and the apples are bubbling around the edges.

Remove from the oven and let the crisp cool slightly before serving. Top with vanilla ice cream or whipped cream if desired.

Tips for Perfect Apple Crisp
- Peel or leave the skins on based on your preference. Skins add texture and save time if you prefer them.
- Slice apples uniformly so they cook evenly — aim for about 1/4 inch thick.
- Pecans are optional but add a pleasant crunch and flavor depth.
- Allow the crisp to cool a bit before serving to avoid burns from very hot filling.
- Use a food processor to pulse butter, flour and sugar into crumbs, then stir in oats and pecans by hand if you want to speed up topping prep.
Best Apples for Baking
A mix of tart and sweet apples works best. Try Granny Smith combined with Fuji, Honeycrisp, Empire or Red Delicious for balanced texture and flavor.

Make-Ahead and Storage
Assembled and baked crisp freezes well for up to three months. Freeze in a freezer-safe baking dish, thaw overnight in the refrigerator, then reheat at 350°F (177°C) for about 20 minutes or until warmed through. Avoid assembling the crisp and refrigerating it unbaked, as the topping can become soggy.
