Ingredients

  • 4 chicken breasts
  • 1 cup mayonnaise
  • 3/4 cup grated Parmesan and/or Pecorino Romano
  • 2 tsp. minced garlic
  • 2 tsp. Tony’s Creole seasoning (or your preferred blend)
  • 2 tsp. Italian seasoning
  • 1 tsp. black pepper
  • 1/2 cup seasoned Panko breadcrumbs

Instructions

  • Preheat the oven to 400°F (200°C). In a bowl, combine the mayonnaise, grated cheese, and minced garlic until smooth.
  • Add the Tony’s Creole, Italian seasoning, and black pepper. Mix well to distribute the seasonings evenly.
  • Place the chicken breasts in the bowl and coat each piece thoroughly with the mayo-cheese mixture.
  • Arrange the coated chicken breasts on a foil-lined baking sheet, leaving space between each piece for even cooking.
  • Spoon any remaining mayo mixture over the tops of the breasts so they have an even layer of cheese and mayo.
  • Lightly sprinkle the tops with seasoned Panko breadcrumbs—use a moderate amount so they crisp without burning.
  • Bake on the middle or lower rack at 400°F for about 35 minutes, until the chicken is cooked through and the topping is golden. Cooking time may vary with breast size; larger breasts may need a few extra minutes.
