There are several ways to cook quesadillas — in the oven, with a quesadilla maker, or my favorite: in a skillet or on a Blackstone griddle.
How to Make Pepperoni Pizza Quesadillas
Heat a skillet or griddle over medium to medium-low heat and add a little olive oil to coat the surface.
Place a tortilla in the pan and add shredded mozzarella and pepperoni to one half. If you’re using a griddle, you can cook several at once.
A light sprinkle of Italian seasoning brightens the flavor, and crushed red pepper adds heat if you like it spicy.

Fold the empty side of the tortilla over the filling so you have a half-moon shape, then press gently.

After 1–2 minutes, flip the quesadilla and cook another 1–2 minutes until the tortilla is golden and the cheese is melted.

- 8 burrito-size tortillas
- olive oil
- 4 cups shredded mozzarella cheese
- 4 oz pepperoni
- Optional: Italian seasoning, crushed red pepper flakes
- pizza sauce for dipping
Instructions
