A heatwave hit London this week, and popsicles are keeping me cool. These Caramelized Peaches & Cream Popsicles are among my favourite flavours I’ve made. Slightly sweet and creamy, they have a comforting peach cobbler note that feels indulgent without being heavy.

Cooking the peaches with honey, ginger and a little coconut oil intensifies the fruit’s flavour and creates an ultra-smooth puree that pairs perfectly with creamy coconut. The result is a popsicle that’s bright, rich and naturally sweet.

These peach popsicles are ideal in summer when peaches are at their best, but you can also make them year-round using frozen peaches.

Caramelised Peaches & Cream Popsicles

Peach popsicles are best in summer when peaches are ripe, but frozen peaches work well any time of year.

Ingredients 

  • 4 peaches pitted and sliced
  • 1 tbsp coconut oil
  • 3 tbsp honey (or maple syrup)
  • 1/2 tsp ground ginger
  • 1 cup coconut cream (the thick part from a chilled can of coconut milk)
  • 1 tsp vanilla extract

Instructions 

  • 1. In a pan over medium heat, melt the coconut oil. Add the peach slices, 2 tbsp honey and the ground ginger. Cook for 5–6 minutes until the peaches soften and begin to caramelise.
  • 2. Remove from the heat and transfer the peaches and any pan juices to a blender. Puree until smooth and let cool to room temperature.
  • 3. In a bowl, whisk together the coconut cream, remaining 1 tbsp honey and the vanilla extract until smooth.
  • 4. Fill each popsicle mould halfway with peach puree. Tap the mould on the counter so the puree settles into the corners. Spoon in two small dollops of the coconut cream, then finish filling the moulds with the remaining peach puree.
  • 5. Insert sticks and gently swirl with a skewer or knife to create a marbled effect—don’t overmix. Freeze for 4–5 hours or until completely firm.
