Ingredients
- 4 chicken breasts
- 1 cup mayonnaise
- 3/4 cup grated Parmesan and/or Pecorino Romano
- 2 tsp. minced garlic
- 2 tsp. Tony’s Creole seasoning (or your preferred blend)
- 2 tsp. Italian seasoning
- 1 tsp. black pepper
- 1/2 cup seasoned Panko breadcrumbs
Instructions
-
Preheat the oven to 400°F (200°C). In a bowl, combine the mayonnaise, grated cheese, and minced garlic until smooth.
-
Add the Tony’s Creole, Italian seasoning, and black pepper. Mix well to distribute the seasonings evenly.
-
Place the chicken breasts in the bowl and coat each piece thoroughly with the mayo-cheese mixture.
-
Arrange the coated chicken breasts on a foil-lined baking sheet, leaving space between each piece for even cooking.
-
Spoon any remaining mayo mixture over the tops of the breasts so they have an even layer of cheese and mayo.
-
Lightly sprinkle the tops with seasoned Panko breadcrumbs—use a moderate amount so they crisp without burning.
-
Bake on the middle or lower rack at 400°F for about 35 minutes, until the chicken is cooked through and the topping is golden. Cooking time may vary with breast size; larger breasts may need a few extra minutes.
Notes
- Boneless chicken breasts: You don’t need cutlets—larger breasts work well and stay juicy when coated in the mayo-cheese mixture.
- Cheese: A mix of Pecorino Romano and Parmesan yields great flavor, but either cheese alone will work fine.
- Garlic: Fresh minced garlic is ideal, but jarred minced garlic in oil is a convenient option that adds good flavor on busy nights.
- Breadcrumbs: Seasoned Panko gives extra crunch. Regular breadcrumbs can be used if preferred—just watch the topping so it doesn’t over-brown.
- Seasonings: Feel free to swap or omit seasonings to suit your taste; the listed spices are suggestions that complement the cheese and mayo base.
