
Yummy Honey Chicken Kabobs

8 skinless, boneless chicken breast halves — cut into 1-inch cubes

5 small onions, cut into 2-inch pieces

Directions
- In a large bowl, whisk together the vegetable oil, honey, soy sauce and ground black pepper. Reserve a small amount of the marinade before adding the chicken; this will be used to brush the kabobs while cooking. Add the chicken, garlic, onions and peppers to the bowl, cover and marinate in the refrigerator for at least 2 hours — longer if possible for better flavor.
- Preheat the grill to high heat.
- Remove the chicken and vegetables from the marinade and discard the used marinade. Thread the chicken and vegetables alternately onto the skewers.
- Lightly oil the grill grate and place the skewers on the grill. Cook for 12 to 15 minutes, turning occasionally and brushing with the reserved marinade, until chicken juices run clear and meat reaches a safe internal temperature.
Preparation is straightforward and satisfying: thread marinated mushrooms, cherry tomatoes and the chicken onto skewers, letting the marinade flavor the ingredients. The aroma while assembling builds anticipation for the grill.
