Pepperoni Pizza Quesadilla Recipe – Crispy Pepperoni & Cheese

This easy weeknight dinner is a family favorite — quick to make, kid-friendly, and nearly guaranteed to please everyone at the table.

There are several ways to cook quesadillas — in the oven, with a quesadilla maker, or my favorite: in a skillet or on a Blackstone griddle.

How to Make Pepperoni Pizza Quesadillas

Heat a skillet or griddle over medium to medium-low heat and add a little olive oil to coat the surface.

Place a tortilla in the pan and add shredded mozzarella and pepperoni to one half. If you’re using a griddle, you can cook several at once.

A light sprinkle of Italian seasoning brightens the flavor, and crushed red pepper adds heat if you like it spicy.

Fold the empty side of the tortilla over the filling so you have a half-moon shape, then press gently.

Ingredients

  • 8 burrito-size tortillas
  • olive oil
  • 4 cups shredded mozzarella cheese
  • 4 oz pepperoni
  • Optional: Italian seasoning, crushed red pepper flakes
  • pizza sauce for dipping

Instructions

  1. Drizzle olive oil in a skillet or on a griddle and heat over medium to medium-low. Lay a tortilla flat in the pan (or several on a griddle).

  2. Sprinkle cheese and pepperoni over one half of the tortilla. Add Italian seasoning or red pepper flakes if desired, then fold the other half over the filling.

  3. Cook 1–2 minutes, flip, and cook another 1–2 minutes until the tortilla is golden and the cheese is melted. Repeat with remaining tortillas if needed.

  4. Slice and serve immediately with pizza sauce or your preferred dip.
