This beef liver pate recipe is a favorite in my home for hosting. It makes a flavorful appetizer any time of year. We often serve it as a dip with carrots and celery on the side.

The recipe is naturally Autoimmune Protocol (AIP) friendly and also works well for keto, paleo, and Whole30. Liver is an especially nourishing choice for people with autoimmune conditions.
Why You Will Love This Recipe
- I first discovered liver while following Sarah Ballantyne’s Paleo Autoimmune Protocol (AIP). It’s one of the most nutrient-dense foods, which matters a lot on the AIP diet.

- Liver supports healing and is especially beneficial for people who are anemic or managing autoimmune conditions.
- Pate pairs well with raw vegetables or crackers; it’s versatile for serving at gatherings.
- The recipe is AIP, keto, paleo, and Whole30 friendly.
- It’s quick and easy to make, so it’s perfect to bring to parties or serve as a simple starter at home.
Ingredients

- Beef liver – Use beef or calf liver. If you can’t find it on the shelf, ask your butcher; they often keep it behind the counter.
- Avocado oil – For searing the liver (use ghee if you’re not following AIP).
- EVOO – Extra virgin olive oil is stirred in after processing for a smooth texture and bright flavor.
- Sea salt – Enhances the natural taste of the liver.
- Oregano – Adds a warm herbal note.
- Fresh parsley – For garnish and a bit of texture.
- Pomegranate seeds – Optional, for a sweet, crunchy contrast.
See the recipe card below for exact measurements.
Substitutes and Variations
- Liver: Beef or calf liver both work. If you can’t find liver, ask your butcher where it’s stored.
- Cooking oil: Avocado oil is recommended for searing. If you don’t need to adhere to AIP, ghee is a good alternative.
If you try other substitutions, leave a note on how it turned out.
